ORGANIC BLACK BELUGA LENTILS 1-lb $7
These superior black lentils are organically grown in Montana by Timeless Seeds, a family farm. The Beluga variety is small, firm and quick cooking with a hearty flavor and appealing texture; they resemble in color and size caviar and thus the name “Beluga”. They have become quite the rage in restaurant and now home kitchens, and can be used in place of green and brown lentils in most recipes.
Yet, they differ from other varieties of lentils as they have a pleasant quality to the skins when cooked that almost melts while the interior stays firm. They work well in salads, soups, stews, and much more, and they make an elegant presentation. The subtle flavors make them an ideal “vessel” for spicing and seasonal herbs. Simple lentil cooking instructions:
To Cook 1-2 cups of Organic Black Beluga Lentils, rinse, if desired, then generously cover the lentils in a pan of unsalted water, add bay leaf, half a peeled carrot cut in large pieces, half an onion with 2 cloves stuck in it, garlic clove, sprig of thyme and/or parsley and cook until done, about 18 to 22 minutes. Check them often as they can overcook quickly! Drain really well, season and...enjoy!
