Rubarb + Strawberry...A Truly Awesome Match!
I have such vivid food memories of my grandmother making simple stewed rhubarb when I was a child. Like most fond recollections, I never have been quite sure whether it was the taste that has stuck with me all this time or just that I can attach it to someone I so cherished, but I guess it doesn’t really matter since what I know is I love to eat and cook with this naturally tart vegetable (rhubarb is actually not a true fruit)!
When I had my own restaurant many years ago, I couldn’t wait to do as many things as I could with rhubarb. I would make rhubarb crisp and Brown Betty with homemade vanilla ice cream, we would fold it into a Rhubarb Fool, or in a compote with grapefruit for grilled pork chops. But nothing showed off the taste better than when mixed with fresh strawberries into a simple sauce that we served with a rustic ricotta cake. Years later I still make this dessert for friends and family in the spring and it remains a standout.
A few years ago the inspiration struck me to use this fabulous combination to make our KATZ Rhubarb Strawberry Preserves. As is our style and custom, we keep it simple…crimson red field-grown spring rhubarb, cut into pieces and mixed with the Albion strawberries from a local farmer, and then we add just a bit of sugar to highlight the natural tartness of the former, and a squeeze of fresh lemon juice.
When we all sat down to taste we found a backbone of the deep richness of the spring strawberries tinged with the tart, distinctive flavor of the rhubarb that leaves the finished preserves with lovely shades of rose pink from the pieces cooked down. It would be perfect served with our KATZ Olive Oil Pound Cake or with the Honey Yogurt Panna Cotta. Or for Sunday brunch, serve the KATZ Buckwheat Crepes with a nice dollop....but always a hit on buttered toast!
Our preserves are made the old-fashioned way...we do not use any preservatives, period! Please enjoy every spoonful of our fresh fruit preserves, and refrigerate after opening.
