The Fruit: Arctic Rose & Fantasia Nectarine This combination is one of my personal favorites as it does capture the essence of the fruit “in the jar” and now at its height-of-season goodness it makes you want to eat it all in one sitting with just a spoon in hand!
The Arctic Rose is a white-flesh nectarine with a rich flavor and an ideal sugar/acid balance with a particularly lovely 'rose' tint to the flesh…thus the name. When slightly softened they take on an almost “honey-like” quality that gives you that “drip down the chin” experience which makes a ripe nectarine so special. They are hand cut and mixed together with Fantasia, a yellow-flesh nectarine with a smooth texture, a nice tanginess to balance its sweet mouth feel, and a distinctive crimson-colored stripe on the skin. Together these two nectarine varieties produce a luscious and elegant offering with a marbled, light rose color.
The Taste: In our tasting, which was real “work”, but someone has to do it…right, we managed between spoonfuls to get out the following:
Brightly tart, floral with a deep nectarine “perfume”, slightly sweet with hints of melon, peach even passion fruit, has a chunky texture…really amazing!
Serving Suggestions: Enjoy them with our popular Ricotta Blintzes, Ricotta Pudding Cake or on Buckwheat Crepes, pancakes, or waffles. Or try as a topping for rice pudding or spooned over Greek yogurt; or wow your guests with a cheese plate with soft goat cheese and a side of these preserves, toasted almonds and some rustic bread croutons. And don’t forget to warm them for a topping for a summer ice cream treat.
Our preserves are made the old-fashioned way...we do not use any preservatives, period! Please enjoy every spoonful of our fresh fruit preserves, and refrigerate after opening.
Making our fresh fruit preserves in the artisanal manner for the past 20+ years has been a true labor of love. Each new season brings the excited anticipation of visiting our farmer friends to see them once again and share in the bounty of their well-tended orchards and fields.
In our Napa kitchen, each batch of fruit is skillfully cut or sorted by hand, simmered in small, open kettles, using the smallest amount of sugar and fresh lemon juice needed to set (no pectin, no preservatives). Each "pot of jam" brings you 16 delectable ounces. . .a pound of preserved fruit in each jar hand wrapped in our proprietary Branches paper!
Articles in The Atlantic, Saveur, Gourmet, Fine Cooking, and The New York Times have inspired us to increase our production. Yet, with the small window Mother Nature provides for many of the varieties we use, we like to say around here, "when they’re gone...they’re gone!"
