KATZ INDIAN BLOOD PEACH AND RASPBERRY PRESERVES ††16 oz †$17
Sometimes new ideas and even flavors come together with a bit of serendipity that makes them all the more enjoyable when they are translated into something uniquely tasty. Such is the case with our Limited Release KATZ Indian Blood Peach & Raspberry Preserves.
Indian Blood Peaches have been grown in the Americas since the 1500ís and even found their way to Thomas Jeffersonís Monticello in the early 1800ís where it is still planted today (we arenít crazy about the name, but it originated many centuries ago)! Over time, as with so many heritage fruits, this lovely peach (flecked with scarlet red on the skin, a flesh of yellow-green with streaks of red) found itself out-of-favor and nearly gone from the landscape. But now it is highlighted on Slow Food's Ark of Taste whose purpose is to promote these foods so that they hopefully remain in production and do not become extinct. When our dear friend, Farmer Eddie, a fabulous and hardworking stone fruit and nut grower from Californiaís Central Valley, let me know he planted a small grove of them and they would be ripening in late summer, I was excited to figure out how we could use them in our preserves line-up.
Inspiration came in the form of thinking back on how I would use Indian Blood Peaches when I was fortunate enough to find some back in our restaurant days at a local farmerís market. I loved to use them to make a classic Peach Melba as they hold up beautifully when poached. I remember toping some homemade vanilla bean ice cream with a fresh raspberry sauce with mint sprigs and truly enjoying the simple marriage of flavors.
Voila, that was itÖinto the pot went the peaches with raspberries, which led to the following tasting notes:
The texture of the peach is clear but it is enhanced with the rich 'berry-filled' flavor that gives it harmony; it tastes like you are eating Peach Melba! This year, even more than before, the bright flavors of the raspberry allows the sweet and tart nature of this combination to shine!
Our preserves are made the old-fashioned way...we do not use any preservatives, period! Please enjoy every spoonful of our fresh fruit preserves, and refrigerate after opening.
