KATZ FARM DUKKAH - GROUND NUT & SPICE BLEND 4 oz
Here is the story:
A while back, we posted a recipe on our website for Dukkah, a traditional Egyptian blend of nuts, sesames, spices and salt. This aromatic mix is often used with a good quality extra virgin olive oil (KATZ!) and served with rustic breads, pita and traditional flatbreads for dipping. Last summer for one of our KATZ Open Kitchen gatherings we served bowls of Dukkah that we made mixed with our KATZ Extra Virgin Olive Oil, and we were pleasantly surprised by all the lovely feedback from those who indulged (and came around for multiple dips!) that warm summer day. So, we decided it is about time to add this perfect olive oil partner to our spice collection!
Although I have long been familiar with this Middle Eastern spice mixture, this recipe was inspired by a visit to the highly-acclaimed restaurant in Portland, Oregon, Tusk, where Chef Sam Smith makes his own version of this Egyptian classic. After Kim and I, with our two guests, sopped up every, last drop of the dish filled with extra virgin olive oil (full disclosure, they do use our oils in the restaurant!) with the homemade flatbread served with it, I was ready to come back home and make a batch using Sam's ingredients (which he generously shared) as a good starting point.
How to Use:
Serve as an instant appetizer in a bowl, or our ceramic coaster, or a shallow plate, with equal parts KATZ Dukkah to KATZ Extra Virgin Olive Oil. Or simply serve sprinkled over summer grilled meats, fish and vegetables. Create a mezze (appetizer plate) with hummus, tzatziki (cucumber-yogurt sauce), some grilled eggplant, and of course, include a dish of Dukkah and olive oil for a perfect summer Mediterranean repast.
