Harvest Notes From Albert Katz

On the cold, crisp and clear Fall morning of November 10th, we headed into the olive groves to begin the picking season. We anticipate we will be picking and pressing for the next 6 days without the traditional breaks we take between cultivars. The light crop has brought even ripeness to all the fruit and they are now ready to go! In a couple of short weeks, I will be begin checking all my harvest and tasting notes so we can blend our 2020 KATZ December's New Oil. We pressed some bright, green and spicy oil from the Leccino and Maurino varieties these first couple of days. This included some fruit from our new grove now planted 6 years ago. This youthful fruit seems to be particularly assertive and grassy and I know some if it will find a way into the final Olio Nuovo blend. We will add some of the Frantoio variety which lends the classic artichoke and grassy robustness plus the "kick" that people have come to expect from an authentic olio nuovo. Bravo!
