Fennel pollen granules are hand harvested from the buds of flowering wild fennel in California and Italy, where it has long been a culinary tradition. It has slowly been catching on in the United States as more and more chefs are finding new ways to highlight the strong flavor profile. It has the licorice flavor of fennel seed and anise with some subtle citrus and honey notes. It acts as both a flavoring agent and booster enhancing the deep savoriness and intensity we are striving for in our cooking.
