Figs have a long and venerable history in California…first finding their way here with the Spanish missionaries in the late 18th century. They persevered still further and made their way from Mexico to the mission in Sonoma. This is where they planted the fig trees that by association would later become know as “Mission” figs…cool!
Each year we finish up our preserves season by simmering the last batch of KATZ Organic Black Mission Fig & Adriatic Preserves. The trek to Maywood Farms at the northern end of California's Sacramento Valley is a pilgrimage for me that I always look forward to.
In very special years like this one, farmers Bob and his wife Karen harvest a very small crop of Adriatic figs…light yellow-green in color with an appealing “strawberry” color flesh. These are so fragile and perishable that they are rare even at farmer’s markets. But for those who know their figs, Adriatics can be an object of lust coveted for their intense and lush fruitiness. We combine them with organic Black Mission figs to further enhance this flavorful fruit that made its way to us from sunny Spain.
The finished offering is a potassium-rich preserves with a balanced, rustic character and a thick, spreadable texture. The addition of the Adriatic figs lightens the color and adds a heightened 'figgie' taste making them such a special offering.
SERVING SUGGESTIONS: Serve with a cheese plate of goat, blue and sharp cheddars, or as a condiment with roast pork or turkey, or spread on wheat toast with cream cheese...fantastic!
Our preserves are made the old-fashioned way...we do not use any preservatives, period! Please enjoy every spoonful of our fresh fruit preserves, and refrigerate after opening.

Making our fresh fruit preserves in the artisanal manner for the past 18 or so years has been a true labor of love. Each new season brings the excited anticipation of visiting our farmer friends to see them once again and share in the bounty of their well-tended orchards and fields.
In our Napa kitchen, each batch of fruit is skillfully cut or sorted by hand, simmered in small, open kettles, using the smallest amount of sugar and fresh lemon juice needed to set (no pectin, no preservatives). Each "pot of jam" brings you 16 delectable ounces. . .a pound of preserved fruit in each jar hand wrapped in our proprietary Branches paper!
Articles in The Atlantic, Saveur, Gourmet, Fine Cooking, and The New York Times have inspired us to increase our production. Yet, with the small window Mother Nature provides for many of the varieties we use, we like to say around here, "when they’re gone...they’re gone!"
