KATZ APRICOT PRESERVES 16 oz. $16.00
"For my money, KATZ makes the best jams in the country." Corby Kummer, The Atlantic
We use the Blenheim variety of apricot for our preserves. It is a small, delicate fruit that is sublime, with a deep, rich flavor. They are harvested for a fleeting two weeks each June, and their intensity and texture makes them far superior to the typical commercial varieties. We have been gathering our Blenheims since 1980 from the same family farm in Northern California.
The Blenheim Apricot has its roots in the early 19th century and the Luxembourg Gardens, where they were called the Royal Apricot. It made its way to this country 100 years later and thrived in California’s Santa Clara Valley up until the late 1960’s. But the delicate Blenheim began rapidly vanishing from the market as urban sprawl, cheap imports and the development of new varieties, with firm flesh but little in the way of flavor, took its place. The Blenheim, sometimes called the Royal Blenheim, is now recognized on the Slow Food Ark of Taste as a "cherished food" worth saving.
Our tasting notes this year:
Velvety texture, rich, elegant in flavor…balanced sweet and tart…as “Royal” in flavor as its name implies. Quite simply…marvelous!
Our preserves are made the old-fashioned way...we do not use any preservatives, period! Please enjoy every spoonful of our fresh fruit preserves, and refrigerate after opening.
Making our fresh fruit preserves in the artisanal manner for 20+ years has been a true labor of love. Each new season brings the excited anticipation of visiting our farmer friends to see them once again and share in the bounty of their well-tended orchards and fields.
In our Napa kitchen, each batch of fruit is skillfully cut or sorted by hand, simmered in small, open kettles, using the smallest amount of sugar and fresh lemon juice needed to set (no pectin, no preservatives). Each "pot of jam" brings you 16 delectable ounces. . .a pound of preserved fruit in each jar hand wrapped in our proprietary Branches paper!
Articles in The Atlantic, Saveur, Gourmet, Fine Cooking, and The New York Times have inspired us to increase our production. Yet, with the small window Mother Nature provides for many of the varieties we use, we like to say around here, "when they’re gone...they’re gone!"
