Joshua McFadden, chef and owner of the renowned trattoria Ava Gene’s, and the highly acclaimed modern Middle Eastern Tusk Restaurant, both in Portland, Oregon, is a vegetable whisperer.
After years racking up culinary cred at New York City restaurants like Lupa, Momofuku, and Blue Hill, we met Joshua when he was managing the trailblazing Four Season Farm in coastal Maine…and it was “love at first sight” for us. He “found” our KATZ vinegars and olive oils which became important ingredients as he was "rethinking his way with grains."
Joshua's book features 200 recipes organized into chapters by grain type. He reveals how each grain can be used in both savory and sweet recipes, and he includes how to prep, cook and store each one. These include barley, brown rice, buckwheat, corn, millet, oats, quinoa, rye, wheat, and wild rice. There are special sections to highlight seasonal variations on grain bowls, stir-fries, pizzas, pilafs, and so much more to show how flexible and satisfying, and heathy, cooking with grains can be.
